Correns is the "First Organic Village" in France. The owner and winemaker of the Domaine des Aspras, Michaël Latz, is also the mayor of Correns and has been instrumental in the conversion of Correns to organic methods over the past ten years. For a complete list of the awards see the bottom of this page Vallon Sourn Red Cabernet-Sauvignon & Carignan and matured on oak for one year The Red Vallon Sourn 2003 has won Gold Medal at the Concours Generale Agricole in Paris in 2006 This wine is also in the Guide Hachette 2005 A very expressive nose of a spicy nature nuanced by sweet vanilla from the oak ageing. On the palette, elegance and finesse control the powerful aromas of black fruits. Can be kept in cellars up to 5 years and will improve during that time Recommended with Red meats cooked with mushrooms Vallon Sourn White Rolle & Ugni matured on oak for 6 to 8 months This wine has a golden colour with green reflections. The nose has notes of honey, sweet almond and lilac. The honey and dry apricots are dominant and a light touch of vanilla can be detected. Recommended with fish and shell fish. Croix de Basson Rosé Grenache, Cabernet-Sauvignon & Cinsault The Rosé 2005 has won Silver Medal Concours Generale Agricole in Paris in 2006 The Rosé 2004 is in the Guide Hachette 2005 Has an intense nose of wild strawberries. A note of honey can be detected in the fruity aromas which gives it length and complexity. Recommended with Stuffed vegetable entrées, salmon carpaccio Croix de Basson Red Syrah & Cabernet-Sauvignon The Red 2003 has won Bronze Medal at the Paris show in 2006 The nose is of mature fruits. A note of toast and prunes completes the bouquet. Balanced between tanins and fullness this wine can be drunk now or can be left to mature for 2 years. Recommeded with Lamb with herbs, barbeques Croix de Basson White A crystal colour lets you imagine the finesse of this wine. The floral nose opens onto jasmin. The fine aromas are brought forward by a well present freshness. Recommended with grilled fish with fennel. The wines from Les Vignerons de Correns export as far away as Japan.
